Skillet Roasted Red Potatoes
With Grated Lemon Rind and Chocolate Mint
Lemon and Chocolate Mint give these potatoes a zesty, interesting, springtime flavor.
2+ cups diced red potatoes
1 teaspoon butter
1 teaspoon extra virgin olive oil
2 tablespoons fresh chopped chocolate mint
1+ teaspoon grated lemon rind
1/8 teaspoon salt
ground black pepper
1. Place potatoes in medium saucepan, cover with water, bring to a boil. Reduce heat and simmer for 5 minutes, drain, cool.
2. Heat the butter and olive oil in a large skillet over medium high heat. Add the potatoes and cook for 10+ minutes until potatoes are golden brown.
3. Add the chopped mint and grated lemon rind, salt and pepper and toss to coat.
